Agreed. I feel the whole issue here is the eel was essentially double cooked, for lack of better phrasing. Eel is normally pretty good, so if he started with raw eel, it'd probably go much better.

Before I got pregnant I used to like this one slightly deep fried sushi roll. It was called a volcano roll; it had eel, salmon, avocado, salmon roe as well as the rice and seaweed. It came drizzled with a creamy sauce and also teriyaki sauce. I miss it. The eel before it got turned into sausage looked pretty good actually.

I believe that style of preparing eel is known in Japanese as a 蒲焼き[Kabayaki], and it's most popularly served over a bed of rice. In Japan, there's a dish called うな重[Unaju] that serves Kabayaki over rice in a special wooden box, and tends be luxury gift for many high rollers in the country's society
