Making Vegan Roast ''Duck'' Salad Using Canned Mock Meat 

Have you ever tried vegan “duck” ?
I’ve found canned mock duck at an Asian grocery store and tried it for a quick lunch!
It was delicious with roasted vegetables and soy garlic dressing 😌

INGREDIENTS
- 2 servings
2 cups carrots
2 cups brussels sprouts
3 bell pepper
1 x 280g canned vegan mock duck
1 tablespoon olive oil
1 teaspoon salt
1 teaspoon oregano
a little bit of pepper and chili flakes
5 cups lettuce
- Soy garlic dressing
3 tablespoons extra virgin olive oil
1 tablespoon light soy sauce
1.5 tablespoons lemon juice
1 clove of garlic, chopped
1/2 teaspoon white pepper
1/2 teaspoon cayenne pepper or chili powder
DIRECTIONS
1. Preheat oven to 400ºF/200ºC.
2. Add cut vegetables and mock duck to a baking sheet lined with parchment paper.
3. Drizzle with olive oil and sprinkle the seasonings. Bake for 45 minutes.
4. Mix the dressing ingredients in a small bowl. Slice the roasted mock duck.
5. In a large salad bowl, mix roasted vegetables, mock duck, lettuce and soy garlic dressing together.
6. Enjoy.
