Recipe is adapted from/inspired by Ettore Cioccia's Raspberry Namelaka cream. I've been obsessed with namelakas lately, and was looking to create a mango flavor, but couldn't find a good recipe for it. Hence, this side project.
You can use this cream for filling tarts, choux pastry, entremets, or your open mouths. Again, no judgment here. It can also be whipped for piping and decorative purposes, but I wouldn't recommend it as a filling or for icing cakes.
