Once relegated to only being a Thanksgiving side dish or in a casserole at the local potluck, sweet potatoes have seen a huge boost in popularity over the past few years. Sweet potato fries and other variations on this tasty tuber have become far more prevalent at restaurants and on dinner tables, at least in part due to the belief that they have a greater health value than regular potatoes.
But you may not be getting all the health value you could out of your sweet potatoes, or worse, you may be making some incorrect choices when cooking, storing or choosing them. Avoid these mistakes everyone makes when cooking sweet potatoes.

I cook them whole (skin pierced) at 400 F for 45-60 minutes, depending on size. The high heat breaks down the tough fibers, so the interiors are as smooth and creamy as a soufflé.

There's no point in piercing the skin. Freeze them for 1-2 hours, then cook at 450F for 90-120 minutes.

So you said sweet potatoes can last notoriously ( complete malapropism) long, then you go on to say they only last a month, well that's BS. its another amazing food item, sweet potatoes can be traced back to 750bc in Peru, but it takes modern day Americans to tell us and the rest of the world how were storing, preping, cooking and eating them wrong. Bla bla bla

Yes my father would grow sweet potatoes on our homestead and to keep them in the back of home at the beginning of the rows of garden he would dig holes and put the sweet potatoes in the holes, cover with pine straw and then cover dirt on top of that. (Called Banks) I remember every time we needed potatoes my mom would say go to the bank and get some potatoes. 😊😊. How I miss those days. Thanks for sharing. Peace and Love ❤️

My two cents to speeding up the cooking process: Poke a few times with a fork, pop in the microwave for a couple of min. (depending on the size) before cooking in the oven. Cuts the cooking time in half and doesn’t effect the flavor! 😁😁

I have sweet potatoes for breakfast every morning. I peal off their skin with a knife and then wash them before I put them in the rice cooker. It just takes around 20 minutes to boil them thoroughly in it. Easy and simple. As a big fan of cheese, I like to put a slice of cheese on top of sweet potatoes before eating. The sweet potatoes melts the cheese in the same way as the burger does it. What a delicious and healthy meal!

One large sweet potato .. wash well, pierce well, microwave directly on turntable 9 min +/_ depending on microwave and size of potato, split and serve with butter or other quality fat in order to get full benefit of fat-soluble vitamins, and perhaps a little black pepper for added flavor and to aid digestion. Consume entire potato with skin for greatest nutritional benefit. (same with white baked potato). Two people may share one large potato while a second potato cooks. I have never tried cooking more than one large potato at a time in microwave; but two small to medium might work just fine. As for running regular oven for potato, I would only consider when using oven for something else at same time, such as meatloaf or chicken. I never used to eat the sweet potato skin but, after learning so much nutrition is LOST by not eating skin, I learned to eat potato skin and love it and since would not dream of wasting so much as a bite :)

In the U.S., none, unless you're visiting a specialty market that has true yams. What is commonly sold as a yam in the U.S. is actually just an orange sweet potato. If you do find some true yams, you are unlikely to mistake them for sweet potatoes, as they have a brown bark-like skin on them, usually have white flesh (though there are other colors), aren't the same shape, and are usually larger in size.

Back years ago, when you baked a sweet potato some of the sweet juice would actually run out of the potato. The potato was actually sweet! The ones today are a far cry from the old varities. You have to add butter, cinnamon, sugar or whatever to liven the up a bit. Todays commercially grown vegetables pretty much suck. Problem is that most folks who grew up without a gardening background in these later years don't realize what has been lost in the new plant varites. Most of what were bred for longer shelf life or resistance to insects and so on. Flavor was not a priority.

My favorite way is to scrub the skins with a veggie brush in a bowl of water, & then a quick rinse under the faucet. Then I rub the skins with a bit of a good oil, like Olive or Avocado, & bake them, a few at a time, with space in between, in a baking pan. I don't pierce them, as I want to retain their moisture which helps the baking process. This way, I enjoy eating their crispy skins. In a 425° oven, they take about an hour, depending on size. For people who can't eat sugar, I've heard it helps to cube & boil them, but they seem to lose a lot of flavor. The texture of boiled cubes is nothing like the soft mushy sweet baked ones. The cubed form can be cooked in a home made soup, so nutrients are not lost, or in a curried lentil dish, simmered in coconut milk until all are soft. BTW - they're not in the potato family & they're not yams either. So what are they? They need a new, better name!

I make sweet potatoes for the family at Thanksgiving & Christmas. After I boil the sweet potatoes I start to peel them and there are a bunch of strings in the sweet potatos that I have to pull out. I can’t keep up with all the strings. I mash the sweet potatoes with the potato masher and it takes out some of the strings but not all. What is causing all the strings in the sweet potatoes???
@d.v.r2933
@d.v.r2933 5 месяцев назад
The 2 main reasons for this tend to be 1.) These "strings" can come from growing a potato in soil that is too fertile. The potato is a root and roots store nutrients. Grown in soil that is too fertile, sweet potato vines will grow fast and big and the result is long stringy potatoes). 2.) Sweet potatoes stored at temperatures above 60 degrees Fahrenheit will shrivel and become dry and stringy. Sweet potatoes may develop an off-flavor and the flesh may become discolored when stored at temperatures below 55 degrees Fahrenheit.

I love sweet potato; boiled with skin on, roasted, fried covered with rice flour, or boiled, dried in the sun. All very nice, but must be white flesh, pink outer skin. My parents grew them in East Africa.

Roast oiled sweet potatoes till soft. Skins slip off easily. Mash with cinnamon, butter and real maple syrup to taste. Delicious!

I am sure they are delicious that way, however, you might as well eat candy. Sorry to say that, but try them without the sugar, you might be surprised.

I also enjoy something the hispanic community calls " batata ". It is almost white in color and not as sweet as yams or sweet potatoes. I add it to a stew, as one of its many vegetables. Jesus is Love

Happy Cook - The answer is "no " . More like yams or sweet potatoes. I have experienced yucca more as an under-cooked white potato. Jesus is Love

"Baking sweet potatoes can also cause an 80% drop in vitamin A levels, twice as much as boiling. Therefore, from a nutritional standpoint, boiling rather than baking should be recommended for cooking sweet potato."

There isn't a problem with that. That is what I do all the time. Wash them properly, place on a plate and put in microwave for 6-8 minutes according to the size. You can also eat the skin. Very delicious for breakfast with scrambled eggs.

My take on a mistake. Applying a brown sugar glaze on sweet potatos! LIke sprinkling sugar on ice cream. Sweet potatos are by definition, SWEET! Why the glaze??

@yolandalindsey5765
@yolandalindsey5765 2 года назад
That's my question too. Nothing needed to be added. All those additives just take away the lovely flavor. Keep it natural, sweet and delicious. One of the good things about sweet potato, it is delicious for breakfast with scrambled eggs and a cup of mint tea. I cook my sweet potato in the microwave on six to eight minutes or a little more if it's big.
