INGREDIENTS for 3 people:
pappardelle pasta with Campofilone egg - 250 g
beef (lean cut) - 300 g
rosemary - 1 sprig
celery - 1
carrots - 1
onion - 1
lard - 1 slice
butter - 50 g
extra virgin olive oil
grana padano 30 months - to taste
white wine for blending - 1 glass
For the broth:
celery, carrot, onion
mixed dried mushrooms
parmesan crust
