Persian Carrot Rice With Chicken / Havij Polo ba morgh / هویج پلو با مرغ

Ingredients:
Carrots : 300 Gr
Chicken Breast : 400 Gr
Rice : 2 1/2 Cups
Chopped Onion : 1 Large
Liquid Saffron : 1/3 Cup
Dried Barberry : 1/2 Cup
Sugar : 1 Tbs
Turmeric : 1 Tsp
Black Pepper : 1 Tsp
Salt : 1 Tsp
Cinnamon Powder : 1 Tsp
Potato : 1 Large
Veg Oil
Water
Instructions:
Soak the rice in a pot for 30 mins.
Soak 1/4 Tsp Saffron in 1/3 cup boiling water for 20 Minutes.
Grate the carrots coarsely.
Cut the chicken breast into strips.
Heat the oil in a large pan over medium heat.
Add onion and fry until golden brown, add chicken breast and cook until no longer pink.
Add turmeric, black pepper, cinnamon and salt and cook for a few minutes.
Add the grated carrots and sugar and Mix well until everything is combined.
Finally add the dried barberry and fry some.
Drain the rice and wash it.
Boil water in a pan.
Pour the rice into boiling water and continue boiling until the rice is soft.
Drain the softened rice.
Pour some oil on the bottom of the pot. put the potato sheets on the bottom of the pot.
combine the carrot and chicken mixture with the rice, layer by layer. Add some liquid saffron between each layer.
cover and cook on low flame for 30 mins. (For best results, cover the lid of the pot with a napkin).
