This time I decided to make sourdough chocolate muffins. Usually similar recipes are used to trigger the leftover sourdough, and then we add soda, baking powder to the dough to extinguish the excess acidity of the sourdough and raise the dough.
I make these muffins with sourdough. I use it as the main loosening component.
For muffins, we need:
150 g wheat flour
1 tbsp cocoa powder
60 g wheat sourdough 100% moisture "at the peak"
50 g sour milk or kefir
60-70 g sugar
70 g butter
1 egg
20-30 g chopped dark chocolate
Fermentation of the dough for about 2 hours, proofing in tins - about 1-1.5 hours, baking muffins for 20 minutes in the oven. The first 5 minutes at t 200, then lower the temperature to 180
