The Bayless Family Pizza with Tomatillo Salsa, Goat Cheese & Bacon

I’ve done this recipe for years, weaving together the flavors of roasted tomatillos with goat cheese and bacon. The combination just sounded right for me, and it has stood the test of time. My approach started as a grilled pizza, then became a baked one with a thin, crispy crust-the one I’m offering here. (If you like a thicker crust, divide the dough into 4 or 5 pieces, but still roll or stretch them into 12-inch circles.)
Giving the dough a refrigerated slow rise overnight gives the richest flavor. But when I’m not that organized, I simply make the dough early in the morning of the day I’m serving, cover it with plastic wrap and let it stand at cool room temperature for 5 or 6 hours. Two hours before baking the pizzas, I divide the dough and shape the balls, leaving them at room temperature for a second rise.
At the height of summer, I love to scatter on some diced roasted summer squash before baking the pizza, then strew the top of the finished pizza with squash blossoms (pulled into ½-inch ribbons).

A tip for the kitchenaid. If your top is bouncing around like it is in this video, tilt the head back and there is a screw in the joint. Tighten it up a bit, but not really tight. This should stop it from bouncing.

Yea, I love Rick for the authentic Mexican cuisine, and don’t think of him as a pizza guy, but he combined the two absolutely beautifully!❤. And as a long time Ooni enthusiast, I just love seeing him use the top of the line Ooni Karu 16…would love to see him use the wood/charcoal fire option as well!🔥

Rick when I do pizza in the oven I use a 1/2 inch steel plate for the stone. I put it on the top shelf and set the broiler to hi for 25 minutes. This gets the steel really hot. When the pizza is ready to go in I switch the oven from broil to bake at 550. Put the pizza in and let the crust leopard. Once that’s done switch back to broil on hi until you get that char on top. Take the pizza out let the steel heat up again for the next one.

When i was a child my mom made birria pizzas. They were amazing. Still have her recipes. She was butcher in Texas, came to Chicago to work as the lead butcher in Chicago. She always access to great cuts. I have a photo of my mother and toddler being starstruck meeting you at a farmers market at the Dailey Center.

Thanks Rick! Used some of the ingredients to make a bacon pizza with caramelized red onions and a secret weapon sauce (Salsa Negra) and will definitely use this sauce for pizza in the future and will look forward to trying it with the Tomatillo sauce. Thanks again!!

The "00" King Arthur pizza flour will change your home pizza making. It makes making quality pizza crust much easier.

@Rick Bayless Great job chef, pizza looks delicious. A good combination too I’ve tried is goat cheese, roasted poblano, bacon, roasted corn, red onion and drizzled with a cilantro mayo aji style sauce after it comes out. Get yourself a 7” pizza turning peel if you don’t have one. It really make using the Ooni oven alot more enjoyable.

You need the flat steel peel to turn and remove the pizza. The wooden one is great for prep and loading, but the other is what you need.

If I'm putting Bacon on Pizza, I usually wrap it in a paper towel and microwave it. Chop after and it browns on the Pizza. But you do lose the grease.

All squashes produce very similar flowers, he is probably using zucchini (calabasita) flowers. Female flowers have a small green ball at the base...the ovary. Male flowers just have a straight stem

You are so lucky that you like tomatillos. I tried to like them since they are used so much but the taste doesn't taste good to me. I'm glad cilantro doesn't taste like soap to me. I grew up in Mexico but I could never enjoy tomatillos. It makes me sad.

As beautiful as this pizza looks, in all my years of baking ( I am 74 years old) i have never put salt close to the yeast because the salt inhibits the yeast).

That is ONLY for proofing. If not, then it's perfectly OK to do so. Really, unless you are using active dry yeast, it is recommended you do proof it, for rapid rise or any other type of yeast, it's not necessary but I used to do that. To proof it's sugar, water and yeast, let sit for several minutes and if it foams up, it's good. The reason for active dry is how it's milled, thus the fresher the yeast, the more it will rise, so if you know for certain it's fresh, then go ahead and do as Rick does and put it into the dough. I just add the water, yeast and salt into the rest of the ingredients with active dry and it'll rise just fine.

Look at pizza videos from Naples. There is nothing “random” about some different combinations that they have in Italy. I guarantee this Mexican inspired pizza tastes amazing, especially if the dough is great.

@@mikebordeaux8218 You need to look at food types in a more abstract way. I’ve seen Naples pizza makers use pistachio cream as a sauce base and said WTF? Tacos, dumplings, sandwiches, pizza, etc are just different methods of using a dough to bring different foods together in one bite. Every different country has their own regional variations to suit the tastes and ingredients of the region. Personally, I’m a pizza purist - tomato sauce, cheese and basil. There is a legendary pizza place in Boston called Galleria Umberto that only serves plain Sicilian slices. Some people hate that but there is a continuous line of 20-30 people waiting for one flavor of pizza every day - it’s that good.

Right or wrong “pizza” has become a generic term in America like Kleenex for facial tissue. Many cultures have variations of toppings on a flat bread cooked at high heat. Would it make you happier to call it Mexican flatbread?🤦‍♂️
