Great video, I never tried old bay but next time I'll, and you could have added strawberry rub on your catfish when you was smoking them on the smoker.
you need a fish rack. it has holes in it to allow the smoke to penetrate both sides at once.i like smoking cats like you did, but once almost done i put some home made bbq sauce on them. not a lot just a smear .then let that carmalize as it finishes smoking. awesome awesome stuff. bull head catfish are much better than channel or flat head cats.
Sounds good! I used to catch Bullhead catfish where I used to live i n a little creek nearby, but we don't see them much around these parts. I guess the Blue cats like their taste too.
Nice try and sharing your results with us. I like my fish nice and moist...when I smoke fish (Salmon or Trout) it's only until it's about 135 F then I pull it out of the smoker...so it's only a few minutes for 8 oz. filets, even a 2 lb chunk of Salmon only takes about 20 min. unless it was straight out of the 'Fridge. Lemon Pepper and the Old Bay are great for any fish...I tried almost the exact Soy / Worcestershire and found it sucked too...LOL adding salt won't help at all...Soy sauce is as salty as you can get. I found that a dry spice ( Lemon pepper or Old Bay) is better for fish and just smoke it fast, or just sprinkle with both lemon Pepper and Old Bay or Mrs. Dash Garlic & Herb then wrap it in foil and cook on the camp fire for 5 minutes...can't beat fresh fish.
Thanks for watching and especially your input, I'll definitely try it your way next time I smoke more fish. I tried some trout years ago like you said in foil on the camp fire and it was delicious. I can't wait to go back to the mountains of eastern Kentucky and catch some more trout to do it that way again.
The Kentucky Woodsman Rock on Brother! I was looking for a different way to do Catfish tonight. I usually just roll in flour and corn meal with Cayenne then add a little olive oil to a cast iron skillet and quickly fry the fillets...then i make some Browned Butter in the skillet add a squirt of lemon juice to it and add a spoon full of capers then spoon it over the filets..you can do this at the camp fire with practice 8^) there's a fine line between Browned Butter and BURNED BUTTER, but when you get it right this simple recipe will make you a legend.
Haha true, I was pretty new to editing at this point and I guess I should have left that part in just for effect. Was concentrating more on the taste of the fish.
