Ingredients for the 4 cake trays each 21 cm
14 Egg Whites
a pinch of salt
16 g vanilla sugar
400 g of powdered sugar
60 g corn starch
400 g of roasted and chopped walnuts
bake at 175 degrees Celsius (350°F) Under heat Without circulating air (without convection) on medium rack for about 35 minutes
OR bake at 160 degrees Celsius (320°F) Under heat with RECIRCULATED air (with convection) on medium rack for about 20-25 minutes
INGREDIENTS for chocolate cream:
14 Egg Yolks
16 g vanilla sugar
120 g of sugar
200 ml of milk 3.5% fat
150 g of chocolate (40% cocoa)
250 g soft butter
use 100 g of roasted and finely chopped walnuts as a decoration
