In this video, we combined the best features of famous and viral cookie recipes into one BEYOND recipe.
In one of our last videos, we rebaked three famous recipes from
Claire Saffitz, Joshua Weissman and Babish. Each one turned out really good, and each one had different unique taste advantages over the other. So we thought, why not combine all good features into one cookie??
So we got baking and developed this cookie recipe, the final one you will ever need, as it combines all the best taste and texture features from amazing recipes:
You will end up with a delicious cookie, which is super soft, gooey and chewy on the inside, but still has a crispy crust on the outside. The taste is buttery, nutty, not too sweet, and from time to time you get a tiny salty kick. PERFECT!
LIST OF INGREDIENTS:
200g flour
5g baking soda
5g baking powder
160 g butter
100 g brown sugar
70 g white sugar
1 egg, 1 egg yolk (small size)
1 tbsp salt
vanilla
250 g high quality chocolate

My favourite method is browning the butter but then fully chilling it so it can be whipped, for me that gives the best of both worlds texture and flavour wise, and leads to a less greasy cookie. I’ll try your method first though to see how it turns out

Thanks for the suggestion :). We also tried this method, but our cookies turned out a little bit sandy or grainy on the edges. We will try another batch. Maybe the problem was something else. But let us know how our recipe turned out for you :)

tip: you actually dont want to press down the seran wrap when chilling it! im not sure where i heard it from but it was from someones blog

Interesting and good to know! Would you still keep the air away from it, just without pressing the sedan wrap onto the dough? We'll give it a try on our next batch and see how it influences the taste.
