Good job everyone! Loved the sticky pork, loved the black bao bun, loved the idea of a sweet treatment. They all photographed very well, but that black bun with the tuna was a stunner! Can't call a winner without tasting, though.

Jamie’s approach: is this enough meat? Barry’s approach: aesthetics are key Mike’s approach: will this work as a dessert?

I feel like Barry's extra-ness often goes unnoticed, but these charcoal buns with the bright green filling were so beautiful! Brownie point well-deserved! 🙌

Fun Fact! Be careful about eating activated charcoal. It binds to literally all medication, it doesn't discriminate. So if you have prescriptions that are important (birth control pills, antidepressants, antibiotics, p much anything really lol) it's best to avoid foods with activated charcoal.

What about as ultimate local battle? Make the challenge that they must use ingredients produced from within so many miles of the studio our their hometown. It would give you a chance to promote sustainable eating as well.

PSA If any of yall are gonna copy these make sure you use a completely different dye if you are on ANY meds/vitamins/etc at all. Activated charcoal is used in poison control because of how good it is at absorbing stuff. That absorbing powers of activated charcoal is not picky and will absorb everything including the ones that keep you functional. Just stick with food dyes or squid ink.

Jamie's and Barry's dishes are so different but I would have LOVED to try both! But Barry's one was so aesthetically pleasing (I'm sure he'll like hearing that haha.) Unfortunately, sorry Mike, I don't have much of a sweet tooth so he lost from the start for me!

Absolutely agree with that outcome, Barry is easily the most creative in these battles and sometimes it works out. This was one of those times. Hats off to him, if it's as good as it looks, I'd eat that time and time again. Although, I'd have to follow it up with that crispy pineapple desert bao at least once cause that looks delicious.

Btw!! Too much activated charcoal can screw with your birth control, antidepressants, and pain killers! The amount in buns won't mess you up much, but its important not to eat too much of it if you use any of these!

In my country, using activated charcoal as food coloring is still trending up until now. We use it for burger bun, pasta, martabak (one of Indonesian dishes), and even ice cream!

Barry's was definately the one that looked the tastiest to me, though Mike's idea seemed really great. I'm not super keen on sweet things in that sort of form though, as nice as the fried pineapple looked. I think Barry's would have been perfect with something sweeter in there, like small bits of mango and tomato. The pork in Jamie's looked mouth watering.

The black bao bun looked amazing! Much more appetising than I expected. Activated charcoal is a substance with medical use, so just make sure anyone who eats it knows that it will absorb medication and they may have to plan around it.

That was actually really great on all levels! Shoulder action, cartwheels, store-bought crème anglaise in last place. On my foodie bucket list: making Leipziger Allerlei properly, the difficulty lies in getting all ingredients fresh at the same time, and preparing them all perfectly. Also making paté en croute from all sorts of game.

I really liked the look of Jamies best, but that's mainly because I share most of his tastes. Well deserved point for Barry. Mike, it was an excellent concept and if it were up against anything else it probably would have won.

Ingredient wise I would definitely go for the pork belly with charred corn personally but the other two looked great too. All ingredients of these threeI know can be delicious. Why not have all three as a bao bun flight! Who doesn't love a good bao? A couple of tips - have a perforated was paper liner in your steamer (you can buy these to the size of your steamer). Proof your dough overnight if you can - makes it a little fluffier and more flavourful. Try a chive and/or kimchi and/or pork mince bun (the fully enclosed kind) with a crispy bottom. And make lots because everyone will want seconds, thirds. Benefit over a burger - the bun or bao enclosed bottom means that you don't lose the juices over your trousers. Just your fingers.

I have to say, I think they all look delicious but Jamie wins for making the dish that feels most like a filling meal imo.

Right off the bat I want to say I've never seen bao look like that before :O Normally we would have the dough wrap around the whole filling (almost like a dumping!) and steam them With that being said all of them look AMAZINGGGGGGG but I've never seen tuna in bao before so my vote is for Barry! You guys should do a fried rice battle!!

carnitas with a chimichurri topping. spicy pulled pork with maple mango topping. smoked salmon with radish on baby watercress and lemon dill mayo. You could mix and match all that goodness. all hail the mighty BAO BUN.

I like that Barry took a risk with the charcoal and the flavours seemed light and refreshing. Pineapple and coconut are some of my favourite flavours and I really wanted to pick Mike's but Barry's won for me this time.

Barry made the starter - Jamie the main course and Mike the dessert. One of the closest battles I can remember! Noone deserved the third place. But Barry really deserved it to win, creating the most creative bao bun imo. It would have been great to see how you guys made the actual bao bun in this bao bun battle tho :D Looks like a "fluffy taco battle" to me :D

I think Jamie's bun is very similar to the Chinese version's bao bun, just that he chopped up the pork instead of using one slice per bun. Pretty sure my mum will love the corn addition to our recipe :) Mike's bun will look better if the pandan flavour was not in the filling but inside the bun, so there's a light green bun that contrasts with the sweet inside. I thought Barry's one is just very Instagram-worthy. I thought the filling inside takes a different twist to the typical bao filling (which usually has a more impactful flavour profile). Good job guys!!

Yes! I agree, would LOVE to try Baz's Bao, Jaimie's is what I would classically expect (and like), and Mike has the most beautiful blue peepers.

About a year late for comment but I've always thought these types of buns were Mantou, and that Baos meant the fillings were completely enclosed in a dome shape with pleats...

Mikes turning into Barry; hes moved away from the best flavour combos and gone to the wacky off the brief stuff which he doesn't do as well as Barry.

Barry's flavor combinations sounded the best out of all of the, I think Ben made the right choice.
