Here are six benefits of trade routes that help you in ways other than stacking your bank
Food for bad yield spots
Domestic trade routes give food and production instead of gold. These can be useful to beef up cities with lower starting yields. For example, a large desert could be a great city with Petra but it can be difficult to get the city to grow initially and actually get enough production to build the wonder.
Using trade routes, you can boost food and production to help get the population going and get the wonder built.
Grow cities faster to avoid loyalty flips
Trade routes can be used as a way to grow cities faster so that you don't lose them to loyalty. This won't work if there is a significant loyalty deficit, but if you find yourself in a situation where you're close to losing a city, you can increase population of the city and surrounding cities faster, getting out of a loyalty hole before your city flips.
Spread religion
Trade routes will exert religious pressure on cities. The origin city's dominant religion with push out half a point of religious pressure for each trade route. This can be useful for pushing a religion deeper into a neighboring territory without needing to buy apostles or missionaries.
Tourist bonus +25%
If you're going for a cultural victory, sending a trade route to a civilization will give you a 25% bonus to tourism with that civ. These do not stack, so you want to send one trade route to each civ to maximize this bonus.
Intel bonus +1 level
Trade routes give you a level increase to your diplomacy. You'll get +1 diplomacy level for having a trade route with a civilization. These do not also stack, so better to spread trade routes out to different civs if you are looking for this bonus.
Emissaries
Sometimes, city states will offer a quest to send a trade route. If you do, you'll receive emissaries to that city state.
That's six ways to use trade routes other than gold.

Useful info to know. There's also one more way I use a trade route, and that is to get better visibility on the map of the civ next to me, so I can see better what units they have there in case they plan a surprise war (they usually hate me for taking up all the land)~😅😅😅

It's great for new or remote cities, especially when you can connect to one of your well established cities.
