Whole Brown Masoor dal & Spinach Roti
Brown lentils or the whole masoor
Dal, this is so creamy made with delicious masala paste & Seasoned with ghee, garlic, chilli powder, goes well With Roti & Rice
Roti/flatbread made wheat flour with spinach puree it’s healthy delicious & very easy to make wrap them with your favorite fillings & make Kathi rolls, veg wraps.
Recipes
Soft Spinach Roti/Chapati
Ingredients
-1 cup spinach blanched and puréed (soak spinach sprinkle salt, 1 tsp vinegar let it sit for 10
Minute then rinse them a few times in fresh water )
Blanche & puree them & set aside
-2 cups wheat flour
-dash salt
In a mixing bowl add wheat flour, salt, spinach puree , ghee mix or well knead the dough until soft & smooth let it rest for 10 minutes
-Portion the dough into small balls & roll the dough neither too thick or too thin
-Heat up the tawa place roti onto the hot tawa
-As soon as small bubbles appears on the surface flip it using a spatula
Cook both side , flip to the other side & gently press down with a spatula so the roti puffs well
Remove smear ghee over the roti & place them In a box to keep them soft
WHOLE MASOOR DAL
-1 Cup whole brown masoor dal
Wash, rinse for a couple of times in water , soak for 2 hours.
-Pressure cook with 3 cups of water, salt, turmeric till the lentils are softened & cooked properly
Allow the pressure to
Release naturally
MASALA
-Heat oil in a pan stir
4 green chilled, 4 garlic, 1”’ginger, 4 tbsp grated coconut stir and roast them for 2 minutes over low flame, Now handful fresh fenugreek leaves chopped stir till fragrant, add 1 small chopped tomatoes stir and cook untill tomato are soft , add dry spices: 1/2 tsp garam masala, 1/2 tsp coriander leaves, 1/2 tsp cumin powder
-turn off the flame let it cool
And transfer to chutney grinder
Add very little and blend to smooth puree
-Add to cooked dal mix it well let it simmer 5 minutes
-TADKA:3 crushed garlic, 1 tsp cumin, 1/2 tsp red chilli powder, 1 tsp fennel seeds, 1 tbsp oil, 1 tbsp ghee
-Heat oil add crushed garlic, cook until golden, add cumin, fennel , red chilli powder pour over the dal
Mix well
-Garnish with coriander leaves
-Enjoy with Roti, rice.
