This breakfast recipe is from the Plant Strong web site and is filled with fiber and colorful fruit!
It makes 8 servings in a 9 x 13 dish, so it's great for a family brunch or breakfast for one person for a week. Store in fridge. Use fresh or frozen fruit of your choice. I doubled the amount of fruit to 6 cups and used frozen blueberries, blackberries, raspberries and peaches.

My additions to the recipe:
4 Tablespoons agave or maple syrup
1 teaspoon vanilla
3 teaspoons ENER G Egg Replacer mixed in 3 Tablespoons water, instead of flax meal, because I'm sensitive to it.
1 Tablespoon cinnamon in the batter and 1 Tablespoon on top before cooking
Topped with fresh fruit before serving
