Extra Soft Sponge:
Milk: 18g
Butter: 64g
Large eggs: 8
Sugar: 49g
Flour: 90g
Soaking Syrup:
Sugar: 50g
Water: 100g
Chestnut Cream:
Heavy cream: 500g
Chestnut puree: 175g
Vanilla extract: 1 tsp
