Ghee vs Butter
Ghee, a type of clarified butter, which is a fancy term for pure butterfat - while it has similar properties to regular butter, ghee is like an upgraded version with a richer taste, higher smoke point, deeper color, and more nutrients
Ghee and butter are made up of different components - Butter on its own is comprised of butterfat (churned from cream), water, and milk solids; Ghee, which is rendered from butter, is only made up of butterfat
Ghee also contains butyric acid, a short-chain fatty acid - butyric acid is an essential nutrient for the digestive system because it helps maintain healthy cells throughout the GI tract, and provides energy to the cells in your large intestine
Ghee is a rich source of the essential fat soluble vitamins: A, D, E, and K.
Ghee has a higher smoke point than most fats, with a smoke point of 450 F - By comparison, regular butter and coconut oil only have a smoke point of 350 F, while extra virgin olive oil has a smoke point of 320 F
Macadamias
Contain palmitoleic acid, which has been shown to be a major component of myelin, the fatty, protective coating around your neurons
This protects your long-term brain health, fending off neurodegenerative diseases and mental disorders
Coconut Oil vs Lard
The dominant fatty acid in coconut oil is lauric acid, which comprises about 50% of the total fat content
Lauric acid is most well-known for its antimicrobial properties, since it’s the precursor to monolaurin, a more powerful antimicrobial agent that is able to fight viruses and bacterial infections
When lauric acid is digested, enzymes within the digestive tract form the valuable type of monoglyceride called monolaurin
Study - Nutrition & Diabetes
Looked at the effects of lard and hydrogenated vegetable shortening on the development of high-fat diet-induced obesity in rats
Rats were fed ad libitum (as desired) for 14 weeks high-fat diets containing either high vegetable fat (HVF, 60 kcal% from vegetable shortening) or (2) high lard fat (HLF, 60 kcal% from lard)
Rats fed normal-fat (NF, 16 kcal% from vegetable shortening) diet served as control
Rats fed either of the two high-fat diets had higher energy intake, weight gain and fat accretion than rats fed normal-fat diet
However, rats fed the HLF diet consumed more calories and gained more weight and body fat with greater increases of 32% in total, 30% in visceral and 36% in subcutaneous fat mass, compared with rats fed the HVF diet
Higher visceral adiposity was positively correlated with serum insulin

Avocado Oil vs Vegetable Oil
Vegetable Oil
Polyunsaturated fats are the least stable fats as they have multiple binding sites exposed, making them particularly open to oxidation - lot’s of available spaces for the free radicals to enter and mess with the fat
They go rancid easily and oxidize quickly when heated - should be left in their natural and unrefined state
Monounsaturated are relatively stable in comparison to polyunsaturated fats. “Mono,” meaning one, indicates that there is one place for a free radical to enter
Aren’t very heat-stable and are likely to oxidize (but less likely to oxidize compared to polyunsaturated fats)
Avocado Oil - smoke point of 520 degrees F
Avocado oil & olive oil are high in a monounsaturated fat known as oleic acid:
Oleic acid regulates the activity of adrenoceptor signaling pathways which direct the adrenergic receptors (α- and β-adrenoceptors) that help regulate blood pressure

Avocado oil is high in vitamin E and contains chlorophyll, a natural source of magnesium, which naturally removes heavy metals like mercury and lead from the liver, kidneys, brain and other organs
Avocados are one of only a few natural sources of the potent compound beta-sitosterol
This phytosterol positively impacts lipid and cholesterol levels in the body - beta-sitosterol may even inhibit cell division of cancerous cells

Thanks!!! Watching you now 14mos, I'm 62, down 60lbs, and breaking personal records in the gym regularly! Better yet all 5 major health problems ( b/p, bad cholesterol, fatty liver, pre-diabetic , acid reflux) gone!! Zero big pharma junk but, herbs for days. YESS!! I’m on day 5 of keto and I feel amazing already but don’t see much difference yet and I’m not weighing myself at all. I was on Keto 8 months ago and fell of the wagon. Was so mad. I was on it for like over 5 weeks and I saw sooo much results. I can’t wait to see them again. By the end of August I’ll be back where I was 8 months ago.

Let me first say thank you for all your hard work at getting top information out there. I'm a clinical nutritionalist, and for years now have taught my patients the keto lifestyle. I just wanted to share some info concerning cashews and sunflower seeds. Cashews are from the cashew apple fruit, usually the nuts are discarded as the inside of the shell contains a caustic material. 99% of all cashews are roasted at very high temperatures to remove the shell and the caustic material. This means all cashews are roasted unless hand cracked. Back in 2006 I used to buy handcracked cashews to make raw deserts for my restaurant. They are insanely expensive! They do seem to cause a less allergenic responses in my experience. Sunflower seeds are very high in lectins and I have found best to be avoided in people with underlying gut issues. More often than not I have had the best response from using high quality heirloom nuts and seeds and sprouting them for optimal digestion. I buy wild jungle peanuts as they are high in monounsaturated fats ( good for those of us with a addiction to peanut butter) In essence, I believe the best results happen when most nuts and seeds are excluded. Unless sprouted and from a trusted source and consumed moderately, they usually cause digestive upset and trigger inflammatory responses. Many blessings E. Black

I agree regarding sunflower. I'm a coeliac that experiences gut inflammation 1 hour to 1 1/2 hours after consuming sunflower, even if it's a small amount of sunflower oil in dried fruit or sunflower lecithins in chocolate. I stopped most seeds (cumin and cardamom are okay, along with small fruit seeds IE in ripe berries), and everything with more omega 6 than olive oil, and feel much better

My local grocery store has grinders at the nut section and coffee also. You buy the nuts and pour them into the grinder and you get pure nut butter. No additives at all.

The best grocery store in my city has this, too. They also have honey dispensers right next to the nut grinders. Bulk sections are amazing.

Man, this guy talks kind of fast (which is a good thing to me) but for whatever reason, he is one of the easiest to listen to channels on RU-vid. It's kind of strange but after a few minutes of his videos I just seem to absorb a lot of useful information. Other people have great content, but the delivery is such that they are hard to listen to. This guy was pretty much made to deliver this content lol.

Buy pecans, I mean they’re still pricier but not as much as macadamias, I buy mauna loas and they’re 659 for a small bottle, I get a full bag of pecans cheaper than that, and I believe macadamias are like 21g of fat and pecans are 20g

It's super easy to make ghee from good butter. I think it tastes better & it should last longer if you made it properly. I use it up very quickly so don't really know.🐄

Peanut butter is also full of palm oil(bad for you & the environment) & full of trans-fats. Mke your peanut butter by taking natural peanuts & blend in a Ninja Blender for 3 minutes to make butter & powder in 1 minute.

DID you read the label on the sunflower butter? It listed sugar as one of it's ingredients. I don't think it was the best choice.

So my main question is what percentage of fats should be saturated and what percentage of fats should be unsaturated in this diet? Say I’m eating 100g of fat per day, do I want 20g of saturated and 80g of polyunsaturated and monounsaturated, or more of one or the other?

I learned the hard way about oil smoking points. I kept using coconut oil in the oven! Right at 350 it'll set off your alarms!

Hey there! In nursing school, awhile back, we were taught that coconut oil is good for external use but not for ingestion due to how the fatty-acid chains break down and/or oxidize in the body once ingested. I have read many articles on why it is good since then. Other things of interest to me (in comparison to this video) are olive oil, walnuts, flax seeds, chia seeds, and different veggies. I know many others have commented on some of the same. Thank you for your time!

I would love to see a #2 of this, with different animal/meats' fats... Bacons, pork chops (side fat vs marbling), beef cuts, tallow/lards, cooking with bacon/duck/etc fats, a whole world of confusion and challenges in this section of the food market.

I don't technically sprot nuts in the means Thomas talked about. I do however like to soak raw almonds in lime juice for a few hours and then sprinkle a little salt and chilli powder on them. Thomas what is your opinion on pine nuts?

Short answer, no I do not worry about those. Fasting and autophagy, plus a low glucose/fructose diet should theoretically be enough to counter act any carcinogenic issues with the nitrites and nitrates, assuming that the science underpinning those aren't contaminated by a "Healthy user" bias where people who care about their health don't eat bacon and people who don't care about their health get their bacon from McDonalds on a CarcinoMac covered in what pretends to be cheese. Long answer feel free to skip. @@-._.-KRiS-._.- From what Ken Berry says and when I had free time and looked it up it seemed to pan out... Like there's Nitrites or Nitrates in your saliva. Not to mention that our body can do conversion from one to the other. I want to study Nutrition but I gotta get other things situated first, so while I don't have a definitive answer I don't worry about it. Are you gonna stop eating vegetables because of the nitrites and nitrates in them? www.ncbi.nlm.nih.gov/pmc/articles/PMC5412236/ Now there's issue about toxicity which I'm not concerned about because of the reduction in carbs means I'm not holding as much water for it to absorb into. Since I'm burning fat I'm not worried about it being stored in fat. I don't know if it's water soluble or fat soluble, I assume water soluble since it's in our saliva. I'm also not concerned about the Carcinogenic issues because on a Keto diet with intermittent fasting every now and then and 24-72 hour fasts every now and then and an occasional dry fast for 24-30 hours (usually it's when I fast and forget to drink water or other liquids I just say I'm dry fasting XD) I just gotta hope that the autophagy is fighting any tumors, and not building up any tumors. The reason I don't eat bacon often isn't the nitrites or the nitrates, it's because my wife doesn't do Keto, but she loves bacon, and when I try and cook 15 strips of bacon for her for a couple of days, I'll maybe eat 3, and she'll eat 12 and then ask if there's anymore.

And it actually isn't the first to go concerning the ecological issue... Avocados consume a loooooot of water and arent't produced in areas that are close to our countries, so I guess we have to find another solution here

Lol, that was the first thing I noticed (as did several others commenting here). I was fortunate to find a brand here in Canada that has 1 ingredient: sunflower seeds. The sunflowers are roasted, which could detract somewhat from their health profile, but it's hard to find a nut butter where the nuts aren't roasted. I will still take that over the added sugars.

I have issues with all nuts and butters. Even coconut. I have even tried activated pumpkin seeds and nope! I just have an intolerance. I can have almond milk and coconut milk. This does explain a lot! Thank you for the information!

Omega-6 is much better for you than Omega-3. It is the "healthier" fat in terms of the fact that most people already get far too many Omega-3s, which can be unhealthy.

@@thenew4559You have those mixed up. Most people get too much Omega 6. From the Bulletproof blog: "For most people, an omega 6 to omega 3 ratio of 4:1 is ideal- that’s 4 omega 6s for every 1 omega 3. Anti-aging experts suggest going even further, maintaining a 1:1 ratio or higher in favor of omega 3s. The average American eats a ratio of anywhere from 12:1 to 25:1 omega 6 to omega 3. Not good." (I omitted their citation numbers.)

@@thenew4559 - you've got it exactly backwards, my friend... it is Omega 3's that are healthy and desirable, while Omega 6's cause inflammation in the body. DeLauer explains this pretty often in his videos, including this one, and information on this can easily be found doing a Google search. You want more Omega 3's in your diet, not less... and people are already getingt too many Omega 6's in their diets, which cause many of the inflammation-caused diseases...

Safflower oil is used to make oil paints. Not all oil paints, most are made from linseed oil (flaxseed). Some of the nicer oil paints, though, are made from walnut oil or safflower oil. Walnut oil makes a luscious paint.

Yeah I saw a previous of video from Thomas In which he highly rated Pecans as such I now eat those, macadamia but they're expensive and recently brazil nuts as in a video he says that it can help convert t4 to t3 which helps with your thyroid.

I usually make my own nut butters. Being allergic to most nuts, I can only eat almonds, so I get the fresh ones, soak them overnight, remove the peel, roast them, blend them in my nutri-bullet. Add some stevia, pink salt and extra virgin olive oil (love the taste of that stuff). And I end up with this delicious butter that beats all the store bought ones, you can even go fancy and add vanilla, or lemon zest and orange zest etc. I might try walnuts, and will definitely try pumpkin as well.

For some people, kefir is too strong and might cause inflammatory reactions as well as constipation. So, do not pursue it if you find that it is not working for you.

@@walkerden-simmonds5532 Yes, diarrhoea is no fun, but in some ways you're lucky as chronic constipation is no fun either. Couldn't you decrease the quantity to a level that is ok for you, say thimble quantity? I personally have found that water kefir is better for my system.

@@ClaudiuK2 hey! It's a recently published study that found an association between cholesterol or eggs consumption and cardiovascular disease and mortality. It included almost 30,000 participants. I haven't had a chance to look at the full study and data, only briefly at friends', but there seem to be odd things with regards to methodology (self-reported consumption,...), dataset, analysis and some of the conclusions imo.

Fantastic video that I think everyone would benefit from! However, I'm perplexed by you not including extra virgin olive oil in the cooking oils discussion. Why didn't you include it? If you had, would you put it in the middle class; good for its high mono- fats and low poly- fats, but not as good as avocado oil for cooking due to its roughly 100 degree lower smoke point?

Yeah, he didn't address home-rendered pork fat. That is REAL lard. It is not the hydrogenated lard that is in the store. I have heard that home-rendered lard is healthier than butter in terms of saturated fats. I make my own lard for my tamales (but I haven't made tamales while on keto). Home rendered lard is way healthier than Crisco. So, your bacon fat is basically home rendered lard. It is from a cured meat (which keto doesn't prefer), but still, I would say okay.

@@erickeenan7562 Cured meat is mostly because of the Nitrites/trates but Ken Berry has a video about how our body can convert one into the other, and how there is more in our saliva of those kinds of chemicals than you would find in meat. So the fear against cured meats might not actually be valuable.

Ghee is higher in cholesterol than butter. Butter is more digestible than ghee. Butter is also not as PROCESSED than ghee is. so more vitamin and minerals retained and not heated away. @@MegaLolipop81 , coconut oil isn't high in sugar, it is literally pure coconut fat. At best sugar is negligible, almost nonexistent. Other forms of coconut, such as coconut milk, flesh, or water, due contain those sugars, however.

Good stuff, however, I want to note that for oils the choice is only one: extra virgin olive oil. I know it's pricey but its the absolute best. Extremely versatile (salads, frying and cooking) and healthy. I recommend buying in bulk from a reputable source. Also for nut butter, tahini (sesame butter) is a good solid choice however it needs a bit sweetening (I use honey) so no the best for keto but this combo provides lots of callories and energy.

It's better just to use olive oil for seasoning or salad dressings. I'm pretty sure that hemp oil, similar to many other vegetable oils, goes rancid when exposed to light and causes an increase in inflammatory free-radicals in your body. Seeds and butter should be fine as long as they aren't roasted, though, just maybe not as good as nuts/seeds that are more Omega-6 heavy.

I love pouring it on vegetables that will soak up the flavor like broccoli, carrots and cauliflower, and I like to add salt, pepper, onion or garlic powder too. Ohhh let me share this recipe too. I made this chicken recipe when it was still frozen so you might have to adjust the cooking time if you defrost it first. Brine chicken thighs with 2 tbsp of salt for ten minutes or longer (just put the chicken in a container and add warm water and salt) Melt 1/2 cup of ghee in a microwave. A borosilicate/Pyrex measuring cup would be best Mix ghee, paprika, garlic powder, onion powder and black pepper for sauce. You'll need enough spices to make half of your mixture ghee and the bottom half is full of spices (I used mostly garlic). At least, that's how I did it. Just add the desired amount of spices if you'd prefer less. Preheat oven to 450° Cook for 25 minutes I could not get enough of that chicken, so good. I hope you enjoy

I'm really starting to get frustrated by the inaccuracy of the info being handed out here. Everything listed as being a healthy component of ghee, is in butter, like the fat-soluble vitamins. The ONLY difference is that ghee has had the protein and sugar removed. Period. Then, using some Crisco product, and calling it "lard", is purely dishonest. Lard is pork-fat, tallow is beef-fat, and both are perfectly healthy (when sourced correctly) to use in the ketogenic lifestyle. No Crisco product should ever be used, nor compared to real food like lard... just like no Wesson product should be used, because even their olive oil is going to be highly-processed garbage.

I'd have to agree about the lard vs. crisco part. I was so happy when he mentioned lard, and was ready to hear his comparison to coconut oil (since I use both of those), but then he pulls out this weird fake oil product called crisco (not a thing in my country), and I feel like that product has no place to be in a comparison with lard :/ Either way, he does end up concluding that actual lard is better than crisco (yeah, no shit), with then coconut oil being better yet. About ghee though - you do get a significantly higher amount of buturic acid in ghee, and the higher smoke point makes it SO much easier to cook with than butter.

The whole point of Ghee is that is HAS had that last little bit of milk solids removed and is strictly the pure fat. Period. I don't see how he could be any more clearer in the video. You can melt butter at home, and then just spoon off that top white salty layer, and voila, you have Ghee!

I just put almonds in glass, pour boiling water on them and skin them off after fifteen minutes or so. I didn't know they had to be put in water for 24hrs but hot water does the job to skin them fast and easy and I was only told that bad s*it is in that skin...

Ghee and clarified butter are technically different things. ghee is clarified butter that has been cooked longer so that the milk solids caramelize which is probably why it has 1 gram less sat fat per tbsp. ghee has 113 cal and 7.9 g sat fat per tbsp while clarified butter has 130 cal 9 g sat fat. Butter has almost no lactose or protein to begin with. Butter contains a 0.01 gram of lactose and 0.12 gram protein per tablespoon compared to 8-ounce glass of cow’s milk has as much as 13 grams of lactose and 8.75 grams protein.

I request you review the healthiness of 1) Olive Oil ( I have heard it is unhealthy if you cook in certain ways with it). I have also heard that some brands sell fake olive oil that is largely composed of other cheaper vegetable oils, how do you tell? 2) Full-fat coconut milk, the type you find in the Asian grocery isle that has about 400+ calories per cup. Is this stuff good for you, if so should consumption be moderated?

That particular sunflower seed butter has sugar in it and is very sweet, so make sure to check the labels.

I sometimes wonder about the coconut oil hype. I purchased a large container of organic coconut oil from Costco and my wife(who is Asian) asked what I was going to use it for. She uses it for her hair and refuses to use it for cooking or eating. The kicker is her family owns coconut plantations. All the Asians I personally have met use peanut or other oils. Do these ancient cultures know something we don"t?

ghee is like 4 times the price of butter but you can easily make it yourself. of course you won't turn butter into 100% ghee but you'll have a 80-90%yield. it just takes a bunch of time and some oil filters.

Sunflower seed butter has sugar called dehydrated cane juice. Maybe making our own seed butter is better? And compare animal fats. I use homemade rendered lard, duck fat, chicken fat, and tallow.

Thomas DeLauer at it again. Keto God providing the mental nourishment we need. I heard walnuts and flaxseed are a good source of omega 3’s. Ps cooking flours like almond flour or flaxseed meal for keto treats/pizza 🍕
