Winnie Chan 你好👋𧎚生長的地方不似蟹那樣污槽,所以用清水沖洗便可,有些人喜歡吃𧎚頭裡面的𧎚膏,吃的時候,頭部份有個胃袋,將它取出後便可以,謝謝支持!祝新年快樂🎊😊👍💕

請問:這道料理蝦頭【蝦膏】的熟成度,與蝦肉的熟成度,兩者如何掌握? 煮過幾次,要不蝦膏熟了但蝦肉過硬。要不蝦肉Ok,但蝦頭卻是水水的……不知能吃【吸】蝦膏否。煩請老師指點…。謝謝。 50多了才學做菜,真有些不好意思。不齒下問就煩請張老師教我。謝謝,感恩…。

Hi 張媽媽, 您好!想試整呢道菜,有以下問題希望您可解答: 1. 曾見人提過用粟粉較易清潔蝦身及去潺,係咪真呢? 2. 点解要將蝦預早浸鹽水同要落幾多呢? 3. 一茶匙粗鹽係浸蝦用定煎蝦用? 4. 如冇粗鹽,可否改用幼鹽? 5. 在超市買蝦時,D 蝦都放喺冰上郁都唔郁; 就算冰鮮蝦,点樣知道其實仲係新鮮呢? 多謝解答。

你好👋𧎚脫了殻,才需要用粉或鹽去潺(粗鹽或幼鹽都可以),否則有殻的𧎚身上是冇潺的,買回家的冰鮮𧎚,如果還未煑,最好放入冰水中,水裡放一茶匙鹽(粗或幼都可以),可以潔淨一下𧎚殻,水要蓋過𧎚面,亦是防止蝦頭變黑的方法,之後放入雪櫃,煑之前取出,剪去𧎚腳,挑走𧎚腸,清洗乾淨,濾乾水份,便可以煑了,至於一茶匙粗鹽是用嚟煑𧎚的,如果覺得太多,可以自己調較下,通常選擇冰鮮𧎚,無論大或小,都係要看看蝦的外殻,有光澤和無破損,𧎚身硬挺,便是靚蝦,否則不要買,因為𧎚如果不新鮮會變霉的,謝謝支持😊👍💕

早晨!很多謝你分享鹽燒蝦的做法,但你用芥花籽油炒蒜蓉是不好的!你大可用 Avocado oil 或 Oliver oil 比較健康一些!食物要衡量健康,烹調和美食為了健康,有時是要加加減減,始終是利口傷身啊!

你好👋秘訣是𧎚要用廚房紙巾索乾才放入髙溫的煱內,不要放入任何水份,用大火燒焗4分鐘,如果𧎚較細隻,只需3分鐘便可,夠鐘加入牛油和炸蒜粒時,便改用中小火,否則㑹易燒焦,謝謝支持和收看!祝新年快樂🎉😊👍💕

我曾經做幾次,蒜蓉蒸蝦,到街市買新鮮蝦,返嚟開邊及用水清洗蝦腸,沒有整干蝦水份,抄蒜蓉加少許鹽再加牛油,放在蝦上蒸5-6分鐘,沒有加粉絲係底,食落的蝦肉有的霉,我是那個步驟出錯,請妳提點,謝謝🙏

你好👋香港天氣非常炎熱,可能買的新鮮𧎚,已經在魚檔放了一段時間,加上回家的時間,和放入密雜的雪櫃,𧎚已經不妥了,所以就算你做了清洗𧎚和處理𧎚的功夫都沒有用,因為𧎚已經變壞了,下次買𧎚,買些游水的,會新鮮些,或帶個小型冰袋加一兩個冰件,去買些需要冷藏的食物較妥當些,因為天氣實在太熱了,對嗎?謝謝支持😊👍💕

e y 你好👋鹽燒𧎚因是白鑊乾燒,水份是靠𧎚本身的汁夜,而汁液被大火燒乾後,都呈現這個類似燒焦的現象,所以不是失手而造成的,謝謝支持和收看!祝新年健康快樂😊👍💕
