I’m Stacey. I’m an ACE certified Health Coach and P.T. as well as a Certified AIP Coach through Dr. Sarah Ballantyne, Mickey Trescott and Angie Alt’s practitioner program.
I have reversed all symptoms of my celiac disease, leaky gut and chronic fatigue with diet and lifestyle. I have also suffered from alopecia, anxiety and brain fog which have resolved without the use of medication.
My AIP journey included a few troubleshooting steps because of histamine issues and unique intolerances but now I feel amazing! I feel better in my 40’s than I ever have in my life!
I started AIP in November 2015 and followed the protocol for years without a dishwasher or oven (or microwave!) and on a single bartender budget with very little spare time. (Now I finally have an oven, lol…) I truly believe that if I could do AIP under those circumstances then so can you and I want to show you how!
(I have since been able to reintroduce some nuts, seeds, seed- based spices, etc but I keep my RU-vid recipes 100% AIP elimination phase compliant!)

A year and a half ago my 6 year old daughter was diagnosed with a rare rheumatoid condition it was devastating she could not run or even sit up on her own. We had to pick her up like an infant to take her to the bathroom or even up and down the stairs. Her Rheumatologist put her on heavy meds as you know the steroids and methotrexate. We just wanted a better quality of life for our daughter so we started researching and that is how we learned about the AIP diet through a wonderful functional doctor who started working on her gut health. Now we have our baby back and she is in medical remission and she is off the steroids and about to get off the methotrexate. With your channel my little girl gets to eat delicious and nutritious food and I thank you so much your channel means the world to us.

I was diagnosed with arthritis as a baby (9months) and only found out about the AIP diet when I was 26yo. This makes me sooooo incredibly happy!!! 😍 I wish your little girl all the health in the world. And may she find happiness in her meals to keep it up and be strong ♥️♥️♥️

Oh no, how horrible, poor child. I am realy glad she got better. Stacy helped me so tremendiously with her fun and creativ approache to this otherwise very fast very frustrating diet. I hope your little one keeps getting better and that you keep haveing fun with food. Best wishes

I really appreciate this video. I have both lost weight and gained weight on AIP. I'm like you if I do make any compliant breads or deserts I just want to eat the whole thing. I've also reintroduced oatmeal but my serving size has gotten out of control.. Because I'm home most days I tend to graze rather than eat high volume meals. That's a problem. Thank you for the encouraging video - as always 😘

If you can have it, raw red cabbage is a great source of nutrience with low calories and large volume. I love to eat it cut in thin stripes with Avocado and sardines or fruit as a Salad. For people with inflamation all this beautiful color is one of the best things to have afterall. The more vibrant the natural color of something is, the more antiinflamatory it is. Each color coresponds with different healthbenefactors so mix it up. On aip real red, not the turning purple blue to black one from berries is hard to come by, for tomatos and bell peppers are its main source on the plate, but watermelon and Papaya do Contain it to

I love papaya, eat it often. Can't do cabbage though, I used to eat a lot of it but Viome had it on my avoid list and I feel lots better without it.

Yeah, in that we are contrary, I often have trubble eating when stressed or unwell and always struggled with large portions. I now started to eat way more caloric dense than I intuitivly would by conciously adding fat to balance that out and if I would eat langer protions of it regulary I totaly see how it can get challangeing to stay lean "even" in aip! ^^ The preference for small or large portions make so much difference. Like one of my favorit lazy breakfasts is pan frying a yellow plantain in a coconut oil, sprinkling a bit of cinnamon over it, yummy . . . And very caloric dense. I used to prefere very lean meat but now started with eating fattier cuts and well, lamb, it adds up very fast. . . . .

Very good points! You are right, it's about portion size and caloric density, no matter what foods are in a diet. The plantain breakfast sounds yummy!

I did AIP for 3 years. I did so well and got so thin and healthy ( I have several autoimmune conditions). I lost almost 30 lbs. Then Covid came around and I fell off AIP and gained it all back. Even though I was eating mostly paleo, I developed severe histamine intolerance ( I miss my avocados the most) , so I relied on white rice and chicken for a few months because it was the only foods that weren’t making me sick. Now I’m back to my old weight, feeling sick and chronic pain. I really want to start AIP again but I have no motivation due to depression and anxiety. 😢

I'm so sorry to hear that!!! It might be really helpful to see a functional medicine physician that can help you get back on the road to health. You may have nutrient deficiencies contributing to anxiety and depression. I hope you feel better soon ❤

I am finding that so many AIP recipes combine high fat and high carb. When I eat like that I gain weight so easily.

Well, high carb in itself can cause inflammation, as fast sugar, for many, so slowing its absorbtion down through adding fat might help, but yes, it gets very caloric dense. I would try to opt for very low caloric, vegetable heavy foods with the other meals to balance that out over the day. Eating my greasy sweet plantains for breakfast, a lean fishmand salad later and than maybe a light stire fry

I have trubble eating enough and prefere many low caloric food, but I totaly get where your coming from, with the reintro of nuts I have to be realy careful of my Omega 3 to 6 ratio and overall intake, one of my favorit, just gotten home foods are sweetpotato fries which I noticed, you can totaly make with a dry rub but for balancing the carbs I always make them with oil along with Guacamole as a Dip if I have Avocado at hand . . . Always paring carbs with fat realy ads up fast, I have gone from my lowest weight to gaining quite fast

Yes, carbs and fat together are the most efficient way I've found to gain weight! I think they taste so good together they lead to overeating? Your comment is making me hungry!😛

I had to drastically cut my calories to be on AIP. That was the only way for me to lose weight. AIP can be extremely high calorie.

Have you tried probiotics? Often getting a stomachache is because you don't have the appropriate bacteria to digest what you have eaten. If you decide to try to overcome this problem with probiotics, use a digestive enzyme before eating difficult foods. I have loved your recipes. You are very creative.

Thank you Pat! I have tried various probiotics and enzymes in the past. I actually found relief through following Viome's recommendations on what to eat and not to eat based on my individual microbiome- no stomach issues anymore!

Yes, I have done a few low FODMAP trials which eliminate onions. When I reintroduce them I feel fine.

Honestly I don’t overeat crap on the AIP and am obese. I hate the idea that if you are obese you are a huge pig, pigging out on garbage all day.
