I would like to see this experiment redone with a higher quality cheese. Like a Brie with the rind removed(or just a brie spread). Because he’s taking a high quality meat and spreading the lowest quality cheese on it I feel like it hindering the potential for greatness.

@@Five_31 I think a lot of the fridges designed for dry aging have a good filtration system as long as chicken is on the bottom shelf and beef is on the top to prevent any sort of dripping contamination, he shouldn’t have to worry.

Cheese Wiz and traditional American cheese are technically industrial products full of emulsifiers and stabilizers, they might have to do with the fat dissolving in the protein while dry-aging and cooking, flavourwise, at the same time. Plus they're full of MSG. I love fake cheese!

i use yougurt mixed with madagascer peper ( the green pepper in a glas ) yougurt helps tender the beef. normaly overnight. the green peper is so i get a good pepper steak, but i scrape of the yourt before i grill it, and use some off the scraped yougurt to make a peper souce.

Love the channel Guga I have learned so much and am a better cook b/c of your content. I Would love to see this done with some different types of cheese. I wonder how a cheese sauce would do basically a cheese gravy or maybe try dipping the meat in a pot of melted cheese and stick it straight in a freezer or dry ice box to stop it cooking to much. The fact that cheese whiz taste good gives a lot of hope to this being amazing with the right cheese!!

Guga, although those tiny crunchy cheese crystals DO contain a very small amount of glutamic acid, they're made mostly of tyrosine, isoleucine, and tiny amounts of most other essential amino acids (including glutamic acid, the sodium salt of which is MSG).

When you mentioned a choice of cheese, I was thinking you should use fresh ricotta. It's very soft, and then compact it onto the beef. It would age along with the beef, and the bacteria in it will help tenderise the beef. Or maybe it'll be gross, who knows.

that's not a strawman argument, maybe you need a refresher on what one is, or maybe you never understood. but that's not the subject here, and if I'm going to explain something it will be my point, not some nonsense that doesn't apply. but if you wanna try to explain your point, I'd love a laugh. "fake" as a description means the subject in question is not the implied product, it's something else masquerading as that. either it is cheese or it's not. if it's not cheese, then asking for an item to be without cheese would mean it's ok to have cheeze whiz, because it is not cheese. if it is cheese, then it would fall under the "no cheese, please" description and it would be unsatisfactory if it did have cheeze whiz. just being something you want to avoid eating should not factor into the yes or no to my initial question, i.e. "no I would never be perfectly satisfied with anything containing cheeze whiz" as opposed to "no I'm not satisfied my order was followed". as for it being fake cheese, I think that's how you choose to look at cheese. you may argue that cheese is made with milk and rennet, and the rennet makes enzymes and acids that makes the milk protein casein coagulate forming curds. those curds are drained and pressed and left to age forming a wheel. but then you have to deal with ricotta, which is accepted as cheese. ricotta is made from whey and vinegar with no enzymes like rennet. the acidity of the vinegar curdles the milk protein and forms ricotta. the proteins contained in ricotta are not the same proteins in cheddar or swiss, as those traditional cheeses have casein protein, since you can use the whey that is left over from a cheese that was made of casein. I'm fairly certain any coagulation of milk protein and fat qualifies as cheese. additives like emulsifiers and flavor just make a different cheese. it's simple really. if you ask for a meal with no meat, and you were brought an impossible burger with fake beef, you would not suggest that fake meat is beef, because it has no cow in it. I am asking if you think having a dish with cheese whiz is satisfactory for an order that specified no cheese? my argument is that cheese whiz is not fake cheese, it's just a cheese that people who want to sound like they have good taste will disqualify because it's new and not traditional. same with people who say American cheese is not real cheese, so they can say they know better than people who eat it, even though it has its place in some dishes, like cheeseburgers.

Compared to "real cheese" it certainly doesn't taste as good as any cheddar, American, Gouda, parmesan, etcetera. That's because it was made to be a cheap cheese-like alternative spread. Nutritionally speaking I'd be inclined to agree with those who call it a fake cheese.

i use that cheese whizz as my base for cheese fries, and with cheese steak. i make it with fresh bacon/bacon grease and a few other ingredients depending on which I'm making . LOVE IT!!!!!

How about a Cupim Dry aged for an experiment. It's seems to me the perfect cut of meat to be dry aged. An entire piece is very thick and surronded with fat. Plus the main reason it's a tougth meat is how rich it is in collagen. And dry aging tenderizes the meat by breaking it down.

I don't know if it's been done before, but it'd be really cool to see a steak completely dry aged in honey bbq sauce. Pizza Hut has this amazing sauce they use on their boneless bites, and it tastes incredible, so I can only imagine what it'd do to a good steak.

It might be expensive, but Brie can be pretty liquidy when you heat it. There is also Velveeta (which you can get in a brick). The Cheese Wiz may be too processed, and may be imparting a particular flavor velveeta and Brie may not do.
