I used to work prep at chipotle. The rice is just oiled right after being cooked, it's a cup and a half of oil for a single batch of rice, which is about 4 third pans, then each third pan is tossed with a third of a cup of citrus, which is just half lemon juice half lime juice, a cup of chopped cilantro, and 2 tablespoons of salt. For brown rice you cut the citrus and salt in half. We don't cook it with lemons or any strange stuff I've seen. That doesn't mean those methods are wrong, just that's not how it gets made at chipotle. We just washed it and dropped it with bay leaves, a single bay leaf will be more than enough for a home batch. Also, running down the list: the chicken thigh marinade is a mixture of adobo, honey, salt, and a bit of oil, steak is just the adobo, and adobo is basically ground up paste made from chipotle peppers. That stuff josh had you mix up in the food processor was a kind of adobo with a lot of added flavor, if you're missing some of those ingredients that aren't the chili peppers, it's fine. Beans just get a healthy splash of lemon and a tablespoon of salt per third pan, pintos used to have bacon in them but they don't anymore. If you don't know how much you need, underseason and add it to taste. Fajita veg is just sliced onions and bell peppers thrown on the plancha or in a pan with a small amount of oil, salt, and oregano, and then leave them alone. Go do something else for at least 3-5 minutes. Don't touch them, don't move them. Don't add too much oil. You're trying to caramelize and even char them a bit, and they'll just turn out floppy and bad if you touch them. The plancha was hot enough to cook like 10 pounds of chicken thighs in less than 10 minutes, you will probably not burn them on your home stove unless you're a true maniac. A deep third pan are those long pans you see most stuff in when you go in. They're all based on hotel pans, a third pan is one third of a hotel pan, a sixth pan is one sixth of one and what we'd put sour cream, hot, and green salsas in, and they can be either deep or shallow. Rices and beans are in deeps, shallows are the ones that are about half as deep. When I left we were phasing out of using those because they didn't properly reach the hot water, so it was harder for them to keep temp. Oh and just salt the fuck out of everything. Like just go ham. A deep third of chicken will get something like a third of a cup of salt on it when it's on the grill. That pan of guac, when it's full, has a full tablespoon of salt in it. The reason chipotle tastes good is we just use a shitload of salt. If yours at home doesn't taste as good, it's because you didn't add enough.

When you cook bacon, save all the grease. Filter it through a paper towel and you can use it for the lard replacement in the tortillas, just reduce the amount of added salt. The bacon flavor is subtle but they smell amazing and work just as well as lard based tortillas,

Jazmine Vizcaino Good point. I think bacon treatment and how high of heat you use when you cook your bacon definitely will change the flavor. I usually use uncured thick cut bacon and render things at a super low temp on the stove since I use the bacon bits for greens, which def makes the flavor of the recovered fat more mild. The fat from oven cooked bacon will also generally be less smokey. Cured bacon on a high heat will for sure produce a stronger “bacony” flavor.

For my preference the entire time of making homemade tortillas since I was 7 Usually my mom uses nothing or some neutral tasting oil. But if we do have liquid bacon fat it's probably the best tortillas you'll ever eat in your life. If you don't have liquid bacon fat but it's literally not much of a difference between liquid bacon fat vs solid bacon fat but there is a difference between neutral tasting oil vs liquid bacon fat by A LARGE MARGIN.

For tortillas, my grandmother used to use lard, my dad uses vegetable shortening, my sister uses olive oil, and one of my uncle uses bacon fat... So many choices. It's a personal preference, I believe.

He shouldn't even use a strainer and extra bowl to clean the rice too. Just dump the rice in the inner rice cooker bowl and wash and rinse the rice directly in it haha

That doesn’t really work with the rice cooker he has. It’ll be too much water and the rice will be mushy. I know because i own the same model he has. There’s little markings on the bowl that show how much water you need. If you’re using two cups of rice than you pour in water until you reach the marking that says 2. Very quick and simple

I’m a kitchen manager for chipotle, the rice recipe is for a deep 1/3rd pan. Which is 1/3 cup of lime/lemon juice (we use a mixture by minutemaid) 1 cup of cilantro and 2 tbsp of salt

What I like to do for tortillas is use melted pork fat. You get the porky flavor, and also a soft and chewy texture that I really like.

In my family we normally use vegetable shortening for our flour tortillas... Also, you can only make your tortillas as big as your "Comal" (pan) otherwise they won't fit or cook evenly.

Chipotle Rice is very simple. It’s made in a rice cooker with water and bay leaves. Then after it’s done it’s coated with sunflower oil. Then the rice is mixed with citrus juice (mixture of lime and lemon juice), cilantro and salt. That’s it

White rice: 2 cups of cilantro, 1/2 of lemon and lime juice (it comes mixed in a 1-gallon bottle already from minute maid) Add the white rice Mix it then add 2 table spoon of salt and mix more until the salt is fully mixed with the rice

I was inspired by you so I bought champagne, wagyu beef, iberico ham, saffron, black licorice, black truffles, açaí, belgian stout, caviar, handmade some fresh spinach pappardelle as well as ice cream from free range grass fed organic cows, and my bowl of cereal came out terribly.

totally recommend using lard if you don’t like keeping bacon fat around for your tortillas!! it also works lovely when making tamales

i really like chipotle as well and would love to be able to repeat at home. I would not havve the patience to make the marinade from scratch. There is not a chipotle near me so I could enjoy it more often.

Former manager for Chipotle here--the rice made there is pretty simple. Cook rice as you did in a rice cooker, open lid when done, drizzle a neutral oil over the top, allow to rest for 10 minutes and absorb the oil. Then add lemon-lime juice, salt and cilantro. I couldn't give specific measurements because everything is done is batches in-restaurant.

tip for making rice: add a dash of oil with the water. My mums rice always turns out so fluffy and delicious.

Also salt. The key to good as rice is to salt the rice water. And if you’re cooking rice to use in fried rice and want that chinese takeout flavor, add msg to the water.

I use bouillon/stock instead, it's nice when the base rice actually has a bit of flavor. Unless you're making rice pudding, it's great. Cooking it in real stock is also fine but the cube is quick and easy

I make the chicken with the chipotle peppers, guajilo peppers, lime, garlic, cumin, salt and pepper, and Greek yogurt. It's delicious for chicken sandwichs or on salads. I know the marinade is significantly changed but it's still delicious.

I feel you with all the allergies. I’m allergic to melons, gluten, dairy, and vitamin C. I was gluten free and vegan for 3 years. It was rough.

David, let’s see if I got you beat on food allergies (though I don’t let any of them stop me, except beans). I’m allergic to: turkey, lamb, avocados, tomatoes, strawberries, oranges, peanuts, walnuts, hazelnuts, pistachios, cashews, Brazil nuts, barley, corn, cottonseed, malt, rice, rye, wheat, hops, garlic, onion, mushrooms, mustard, sesame, all legumes (beans), carrots, cauliflower, white potato, sweet potato, and lettuce. One thing I’m not allergic to? Coconut.

How are you allergic to lettuce it's almost completely water lol and by you dont let it stop you....it must be more of an intolerance than an allergy. Because if you are truly allergic to something I dont think you could eat it. Not tryna tell you I know your life or anything lol.

Finally someone cooking rice correctly. The only thing I'd skip is the strainer coz it's faster to wash the rice in the rice pot itself 😊

Personally I make my tortillas with Butter flavored Crisco sticks, my grandma uses regular crisco sticks but I like the butter flavored ones

It’s basically 2 table spoons of salt 1/2 cup of lime juice and 2 cups cilantro however given the size of the rice it’s a giant ass bowl so probably teaspoons in this case versus table

I used to work @ Chipotle. To make the rice you just cook it then add lots of lime juice, salt, and cilantro. Very simple
