Today, I'm introducing a recipe for kimchi bibim guksu, one of Korea's most popular summer dishes.
Kimchi bibim guksu is a refreshing and tangy dish of Korean cold noodles tossed in a spicy kimchi sauce.
It's made with simple ingredients and is easy to make, making it a perfect meal for a hot summer day.
Ingredients: 100g Vegan Kimchi, 100g Somyeon, 1 Tbsp Sesame Seeds
Condiments: 1/2 Tbsp Soy Sauce, 1/2 Tbsp Gochujang, 1 tsp Yuja Cheong or Orange Marmalade, 1 tsp Sugar, 1/2 Tbsp Sesame Oil
Noodles
1. Semyeon
Thickness: 0.8~1.0mm
Cooking time: 2-3 minutes in boiling water
Uses: Bibim guksu (spicy mixed noodles)
Characteristics: Thinnest, chewiest, and softest noodles
2. Somyeon
Thickness: 0.95~1.3mm
Cooking time: 3-4 minutes in boiling water
Uses: Bibim guksu (spicy mixed noodles), Janchi guksu (noodles for banquets), and other dishes
Characteristics: A popular type of noodle that is used in a variety of dishes
3. Jungmyeon
Thickness: 1.2~1.45mm
Cooking time: 4-5 minutes in boiling water
Uses: Stews and soups (such as seolleongtang and jeongol), and other dishes
Characteristics: Noodles do not blow easily
