Yes, there is some bacteria on eggs and salmonella as well. It's very unlikely that you get a salmonella infection from these fresh cracked eggs but not impossible. If you really want to make sure that all salmonella is dead you can whisk the sugar and eggs over hot water and keep the mixture at 60°C for at least 3 minutes. The sugar is nicely dissolved and the eggwhites are bacteria free. Whisk it stiff and cold afterwards and you have a wonderful meringue you can eat without thinking about the possible salmonella in it xD

I made this Lemon Meringue pie today and it was absolutely DIVINE! My mum had a slice and it reminded her of when she was a child and her mum made it. Grandma made a mean Lemon Meringue Pie apparently. Unfortunately, I never knew my Grandma but my mum said that pie would have made her proud! Wonderful recipe! Thank you so much, Sorted Food!

As the meringue still looks pretty creamy... for how long can you store this before serving? Can you still eat it the next day in case there's any leftovers? As meringue contains raw egg... I'm always kinda cautious with letting stuff sit for too long when it's got raw egg in it :-/

i've always had this question but is there any danger of salmonella or other pathogens making you sick from meringue? since it isn't really cooked through just caramelised a bit at the surface, could you get sick from it and thus have to make sure to clean your eggs? The reason i ask is because i get my eggs from local farms and they are just rinsed in water not really thoroughly cleaned

Yep it will, that's why if you haven't got a blowtorch you'll need a really hot grill so that it browns the top before anything else starts to melt!

Hey, make sure you're whisking all the way through the cooking process. If it's cooking too quickly then turn the heat down a little. It does take a while to thicken up!
