This EASY recipe takes only 5 ingredients: Makes 4 servings
1 small to medium roasted beet (cut in half and roast for 25 minutes at 350 degrees)
2/3 cups veggie broth (I use Trader Joes or Simple Truth Organic)
2 cloves raw minced garlic
2 cans Great Northern beans
1/4 to 1/2 teaspoon salt (optional)
Chopped green onions for garnish
Blend ingredients in food processor and top with green onions. Serve with raw veggies, gluten-free crackers or pita bread. Store in fridge for up to five days. If you use a blender or Vitamix, add more broth. ENJOY!
