These delicious "crab" cakes are from made with hearts of palm and chickpeas. They're from Nora Cooks, love her: www.noracooks.com/vegan-crab-.... I ground up brown rice puff cereal instead of using gluten-free Panko breadcrumbs.
You can bake them or fry them. I brushed them with avocado oil and baked them for 20 minutes on each side, which is longer than the directions. I served them with Nora's yummy homemade Mayo www.noracooks.com/vegan-mayo/.
I modified the Mayo recipe to 2 Tablespoons lemon juice, 1 Tablespoon lime juice and 1 Tablespoon Agave, with 1 1/2 cups cashews (soaked and rinsed), 1/4 teaspoon salt and 3/4 cup water and blend.
The Mayo tastes best when made the day before or first thing in the morning. Top the mayo with some sweet relish and devour!
