I love anything in lemon piccata sauce. What a great idea you had to use your leftover shrimp. These shrimp croquettes look so good. I love shrimp. I’m definitely going to try this.

Hi, Jeff! Wow, those shrimp croquettes look amazing! Such a good way to use up leftover cooked shrimp. I think that lemon and "W" sauce would be good in these. Although I think that a panko coating would be good, I am with you: I would prefer them to be a bit more delicate. Thanks for the tip about washing the capers so that they aren't so briny. A bit of wine in the roux is a good idea! As always, great recipe. I am jealous you had leftover shrimp from a pool party: it is 45 right now here in Chiberia, haha
