Loving the close ups in the pan! The Romesco sauce looks so great. Almonds, gralic and french bread combo is interesting to see! Simple paprika sauce and vinegar with sweetness to it, love it all! When you spread it over the sole fillets it really started to make me hungry! :D So cool how you rolled it with avocado! Very tasty and healthy too! Petrale sole is just such a nice delicate fish, and I bet the romesco sauce gave it such a nice flavor. I just love the garlic and almonds that are in the sauce. Smoked Paprika gives it such an earthy taste and Yes, you must have the Sherry vinegar! A perfect fish dish with the creamy surprise of the avocado inside! Butter makes everything better! The choice of wine was perfect. Albarino is such a nice crisp white with those peach and citrus notes. that perfectly pairs with fish.

Hi. Jeff! Blanched and slivered almonds are definitely the way to go. Sometimes buying something what premade so that you can skip a few steps is worth it. I am sure that the roasted tomatoes and peppers were very flavorful. Like with the almonds, sometimes pressing the "Easy" button is worth it instead of "cheffing it up" haha Like you said, the tang and sweetness from the sherry vinegar would be a good addition. A pad of butter on top would add a ton of flavor. Wow, just like all of your other recipes, that looks great. Thanks for sharing!

Your Spanish dish with fresh Avocado is really interesting to replicate. Those Almond really add flavor through it while it was bake. The wine is perfect 👌

The Romasco sauce looks so gorgeous and definitely delicious Jeff! It really brings a nice flavor to that sole fillet, i love it especially when you spread it on top of that seasoned fillet together with the bread crumbs and butter and the added avocado that you rolled inside too! That was a lovely presentation and great pairing with the amazing El Terrano wine with a touch of watermelon❤️

The name of the recipe is hard to pronounce hahaha! And I’ve never heard about this recipe, so it’s originally from Spain? I’m figuring out what flavor would overpower ? Hahaha! Sorry for the term but interesting since u mixed several different taste, sweet, sour and that almonds . And with avocado? Its Just a Beautiful fish fillet recipe with extraordinary sauce Jeff
