really liking the more realxed vibe of your older videos, the new ones can sometimes be abit hectic and against the clock, but this is just alot more chilled out, which is nice.

Just tried this with (milk poached) kippers as a replacement . Smoked haddock's hard to find in the States.For such an inexpensive dish,it's fantastic.

Hey Ben, if you stir that water vigorously before dropping the egg, the egg will kind of wrap up in itself while cooking and give you a much better looking end result. Nice dish though!

Also if you add vinegar to the water, it tightens up the outside of the egg to reduce the amount of egg white strands that flay out. It doesn't add a vinegary flavour either, from experience.

Cause he's been a chef for quite a while you build up resistance to heat...my old food tech teacher could literally take a roasting dish out of an oven with her bare hand xD

Victor Gnoato it's more like his tolerance to extreme temperature is much higher as a result of cooking so much. his pain threshold is higher than someone who hasn't spent so much time cooking.... so.... magical fingers.

Great recipe! Just thought I'd mention that Khichadi is an Indian dish along the same lines; It's made with lentils as opposed to seafood but the rice is cooked the same way (with stalk or water).

One of my favourite meals. Yea, I'd rather this for breakfast than a fry up, but it's usually more work than I'm willing to put in. I do make it for a brunch when I can though. :)

Try the Indian version with chopped up smoked bacon & a few franks. Crisp up half your bacon the rest add raw near the end. It totally transformed it imo.

I LOVE kedgeree, but I've never done the fish in milk or used leek. I will definitely have to give this a go. Not sure about the peas, though.

It's really not easy to find smoked fish (or anything smoked really) and haddock where I live; can I use fresh fish (i.e. dory or seabass) instead? Thanks for the great recipe!

The entire time I did not realize what was being cooked because I did not know what "Kedgeree" might have been, turns out it is what is pronounced in Bangla as "Kichuri" ahaha silly me :B great dish will try it out with poached fish :D

It's "curry-inspired rice dish" .... (compound adjectives are hyphenated). For those of us not in the UK, perhaps one day you can do a short segment on curry powders. I'm always confused by them. Hot? Mild? Should one spice/ingredient be more pronounced than others?

This is inspired from the original (vegan) Indian dish 'Khichdi' - made with lentils, rice, turmeric and other spices. We eat it for lunch too. Rarely breakfast.

The oldest recipe for kedgeree is from 18th Century Scotland and while the spicing definitely hails from India (India was pretty-much a Scottish colony) this is nothing like Khichdi.

You have to have High Quality Eggs for poached ones. Supermarket ones tend to do that. Xx ( disintegrate)

it won't split with just fish in it... and if you add the lemon last after its cooled it'll turn out perfect. - speaking from mallu experience ;p :D

TheScouseassassin i don't know about trout, the big ones around me are smoked salmon and white fish. I'll see if any of the stores have trout though and then I'll look it up

Well here in the UK the stores stock peppered trout fillets in vacuum pack or adding to salads etc. I usually order my smoked fish online.

I think "Kedgeree" is pronounced khichuri (khee-chu-ri)..people still do have it as breakfast but not regularly.

khichuri is a different dish. The first recorded recipe for Kedgeree is from Scotland in 1790.

That's actually a myth. If it does make someone sick then either they are allergic to seafood, lactose intolerant, or just ate spoiled food.

I was told that too when I was growing up. Are you Muslim by the way? Because I think it's a religious thing. My family is Greek Orthodox Christian and I think that this belief is common among Muslims, Jews and some Christian groups. It actually comes from religious laws that prohibit the consumption of land animal products and sea/water animal products. I can't really remember where I read this. And yes, even though I know it won't really make me sick, seeing the fish in milk still makes me a little bit queasy... :-S

Not for this dish, The meat needs to be of a flakey consistency. Chicken and rice with vegetables and egg poured over top and cooked is a chicken Frittata. Really good your wife should try it.

It's not "curry inspired", it's based on an Indian dish called "khichri" which is not a curry. Indian food is not all curry.

Really stupid question: If this dish is from India, where did the Indians get smoked haddock? Haddock isn't native to Indian waters, and Indians don't smoke fish.

This one's definitely an Indian influence rather than a Native American - curry powder and basmati rice aren't things I think you used to typically find in colonial North America ;)

He kept referring to colonization, and the colonization of America is by a lot, more "profound" than India, so I thought that he was talking about Native Americans, I didn't know where curry came from, or "basmati". Sorry (not sarcastic).

Colonial simply means that it came from one of the colonies that Britain had established in India. Its hardly offensive, and merely a fact of history.

from what I know, kedgeree was brought over to England when soldiers returned from the colonies because they missed the taste of India.
