So i did this tonight. When it comes to cooking steaks I'm very average, and this was no different. Overcooked a bit, didn't have the right equipment, low quality cuts... which is important to put up front when I say this was one of the best steaks I've ever made at home. Definitely going to try this again (and learn from my mistakes!)

Hey Guga, I have a suggestion for you to bring your scalloped potatoes to the next level. After slicing the potatoes, not too thin, set them aside and prepare the "sauce" Saute some finely diced onion in butter until translucent. Add in 2 parts heavy cream and 1 part whole milk. Bring to a simmer, add some salt and pepper. Add in you potatoes and cook, stirring for 10 minutes. Transfer half to a baking dish, then top with crumbled bacon and cheese. Add the rest of the potatoes and repeat with bacon and cheese. Bake at 350 for 45 minutes. By using this technique, the sauce does not separate or appear curdled because the starch from the potatoes stabilizes the solids in the dairy. Also, the potatoes will not look gray, because they are partially cooked. Enjoy and God bless.

I made the scalloped potatoes today-incredible, Guga. However, it ended up taking an hour and twenty minutes total (on 400 for the last 50 minutes) for the potatoes to get tender. Maybe my mandolin slices them thicker or my oven is different from yours, but thought I'd mention it in case anyone else wants to try it. I had it with a sous vide ribeye and it was excellent, though!

it wasn't that yours were thicker. his timing was way, way, waaaaaay off. compare to any other scalloped potato recipe. 30 minutes plus time under the broiler is crazy.

Yea raw potato never cooks well in the oven with those type of dishes… you’d need paper thin slices to cook it in 30 mins and they are hard to cook as they can over cook easily and turn to mush. Better pre boil the slices until they are nearly done and then assemble the dish. Just make sure not to over cook them in the water as a couple seconds too long and they will crumble as you take try to move them about. Made similar recipes and always boil the potato beforehand saves a lot of time and guarantees no raw bits that you sometimes get.

This potato dish is one of the most common dishes in denmark :) we call it creme stewed potatoes :) nutmeg adds a kick of flavor that really matches the creme and cheese well! :)

I usually just watch your vids for entertainment, no way I'm gonna afford a Wagyu or try some of these bonkers experiments anytime soon... But these side dish recipes you've been throwing out lately, man... they look cheap to make yet pretty much amazing... I'm 100% going for this scalloped potato recipe ASAP... one of my favorite comfort foods cranked up and made indulgent with nothing outside of my wallet range lol

you should! in denmark we call it creme stewed potatoes and it is super common and wonderful! though one change i would make to his recipe is add a little bit of nutmeg and it would be perfect!

GUGA!! I tried this idea this weekend with USDA Choice Ribeyes. Decent fat marbling, I got lucky. I dry brined one for 3 hours and the other for 24. I cooked them the same way, ripping hot skillet with butter and a touch of vegetable oil. I basted with the butter in between flips and when it got to 125F, I pulled them and rested for 5 minutes. It tasted like American Wagyu......it was utterly delicious The brine time didn't change the flavor at all, so if you only have 3 hours, that will do. Thanks for the great idea!!

Tip: Do not slice the potatoes in a bowl of water. Slice them in a dry bowl to keep the starch on the potato slices. Then continue like you did - and the sauce will be much less watery and much more creamy.
