Same,when I saw it was 69 degrees after it was rested I thought to myself, that's mid well, if it was 69 before resting it would have been well done no problem

Me too! I was raised that way and long before they started injecting all those chemicals into the cows like today which necessitate cooking to well done. Even here, I disagree with his final temperature. I cook ALL beef to an internal temperature of 165 degrees. That is what is needed to prevent bacteria and botulism. I used to overcook meat until their was no pink inside whatever but recently I have gotten used to the idea that a tiny bit of pink is okay as long as the temp is 165 or higher.
This is an excellent skill to have - there are many that won't do a medium rare - so you need to know how to cook one "well done" but keep the juices in - and always let it rest... This guy nailed it...

There’s nothing, absolutely nothing wrong with a well done steak, if you use the proper steps. Searing, basting, and resting. It will still be juicy. It’s just Preference. Personally I like rare/medium rare/ or even medium rare + depending on the cut. But I have had amazing and professionally cooked well done steaks that were so juicy it seemed medium. Thumbs up 👍🏽
preferences sure. But it is undeniable that protein cooked to higher temperature have more moisture loss. This is simple science. That being said, it can be overcome by choosing a fattier steak. The rendered fat makes up for the "juicy" mouth feel.
I've had well done steak and filet mignon at proper steak houses and they were all juicy and flavorful. The filets were drier, but that's the nature of the meat.
My main tip for enjoying steaks is to never be afraid of using too much seasoning! Salt is so important in bringing out the flavour of the meat. We always use garlic powder, salt and pepper

People in my country (India) would call this raw😅. We cook Beef till they become really tender and then we add a variety of spices to make fried beef or currys. This looks good. I guess you'd be able to experience the the real beefy flavour with this one.
Today I did the most yummy steak I've ever cooked while watching this video. It provides every details. My 8th time steak was today and great. The other 7 times were awful.

VERY helpful! I'm actually looking for how to cook 2" lamb chops well or medium well and couldn't find anything. Hopefully it'll be about the same for cooking them as it is a thick steak. Looks perfect.

It takes far more skill to prepare a beautiful, juicy, well done steak than there is to make a rare on in my opinion. I eat all doneness levels and all are great. I can't believe that there are highly skilled chefs who flat out say that its impossible have a good, well done steak. Not true.
Just like a reverse sear method. Started on low heat then high heat.. steak came out perfect!! Now that is a steak. Many people are too quick to judge how does it have a little bit of pink in the middle. Read the beginning of my statement and you would know how he well done steak is still soft and tender and has a little tiny bit of pink with juiciness. Kudos
There’s no such thing as ‘perfect well done’. It ruins the meat and kills most of the flavour that you’d get with a rare or medium rare steak. That’s fact not opinion.
A steak is supposed to not be well done because it has a rare feature: it can be undercooked to preserve flavor and moisture while being 100% safe to eat as long as it’s seared right. I understand that people like it well done, but try it at least cooked medium. It’s a lot easier to do right.
