Just a simple video for pizza beginners on how to avoid disappointing results.
Pizza is a simple dish (but not easy), so you can change the outcome with choosing the right ingredients and preparing them correctly.
We are talking about traditional neapolitan pizza, so the same advice may not apply to other styles of pizza.
Additional info:
You can cut the mozzarella cheese into cube or slices.
Slices are better looking on the pizza but more difficult to use because they will stick to each other more.
Either way, try to cut slices to about 0.5cm (0.2in), and the cubes to 0.5 to 1cm (0.2 to 0.4 in) thickness.
For margherita we use also an aged cheese. Usually we use grated Grana Padano or Parmigiano Reggiano.
If possible, try to buy a block of cheese and grate it yourself for the freshest taste.
Be careful to choose a natural cheese for your pizza, and NOT processed cheese, as it will ruin the fresh flavor of neapolitan pizza we all love.
You can season your tomato sauce as you like, but be careful not to make the flavor too strong or it will not be balanced with all the other toppings.
Remember that the dough has salt in it and the cheese also adds salt to the pizza, so don't put too much in the sauce. We want to taste the freshness of the tomato and the cheese.
Whole tomatoes can still contain quite a lot of skin and stems, so be careful to squeeze them well and remove the unwanted parts. Squeeze hard or you will end up throwing away a lot of meaty parts too.
Be careful not to put too many toppings on the pizza.
Neapolitan pizza is all about enjoying the dough, which has been prepared taking time and love, so don't smother it with other toppings so that you cannot taste it anymore.
