Lately all I’ve been thinking about is owning my own food truck. My dad owned one when I was young and made a lot of money off of it. He was happy and it was always cool to me plus I want to be my own boss 🙌❤️
I did bbq on the DL for a long time. Almost 2 years before I jumped into the food truck game. If you time it right you won’t struggle as much as I did at first. I started in the fall when a lot of busy places schedule out the whole year so I couldn’t get on their schedules. Wing ready to go and licensed by February or March is good timing. Go for it!
What are the temp points for each stage? Temp at removing from smoker, you wrapped at 170, back on smoker to ??? Temp, pulled and set on stove down to 180, then cooler, temp rose to?? Great video, my briskets suck, looking for a method or cook a 4 pounder since I have a small family.
Soon! My food truck and catering schedule has been crazy busy. I just got myself a new off marketplace air dryer and motor guard filter. Plan is to get it plumbed in next week and do some test hits on it and do another video soon.

Life has been so busy I haven’t even had the chance to fire it up yet. Just got a HF air dryer for cheap on marketplace and I’m going to get it all plumbed in with a second filter as well. Then hopefully get to cutting and designing.
I get the high temp gloss clear from any auto parts store that’s rated at 600°. It will only work on an insulated firebox. My first smoker I built myself wasn’t insulated and it just burned right off. So in that instance I just used linseed oil on it.
Since I was planning on the raffle I decided to make him a nice offer so he’d just buy it. I didn’t want to make another trip to OK for the tank he wanted 😂

I can’t remember exactly but I believe the bottom was 80” x 30”. I have another video of a 330 I built just a few months ago and it had what I call short end Caps and the bottom grate was 92” long. You get more cooking area with the shorter end caps for sure 🤙🏼
Did you end up checking the guage? I just purchased the same exact smoker for $200 and it measured 3/16" thick. My serial number was just a few hundred away from yours. I thought all of the originals were 1/4", so curious about others.
