📝 RECIPE:
900g of 00 flour
100g of flour 1 or semolina flour
650ml of fresh tap water
20g of salt
2g of fresh yeast or 1g of dry yeast
🔥 TEMPERATURES AND COOKING:
Preheat home oven to maximum temperature. For the Effeuno oven, 250°C.
Cook at the same temperatures for 20 minutes with steam.
Continue for 15 minutes at 200°C without steam / steamer
Finish cooking at 130° for 30 minutes with the door slightly open
