・Rice flour 40g
・80ml hot water
●Bread dough
・220g Bread flour
・1 teaspoon dry yeast
・30g condensed milk
・4g of salt
・12g unsalted butter
・140-150ml Milk
● How to make memo
・Quickly mix the rice flour with boiling water, then heat at 600W for 20-30 seconds and mix quickly.
(By setting the temperature to 70°C or higher, the starch will gelatinize well.)
Allow to cool to room temperature before using
・Primary fermentation: about 80 minutes at 30℃/86℉ (Degas in about 40 minutes)
・3 division and 20~30min pause.
・Roll-form and ferment until the mold is full.
・ Apply milk to finish
・Bake at 180℃/356℉ for about 25 minutes
