One of my very most favorites is litely fried or warmed blood tongue with poached eggs but the freshest made is the best some I buy is over salted . It would be nice idea to make muffins that way . I like adding herbs sometimes duetsch , Italian or Mexican that is used in regional cooking to my eggs and meats . If I'm in a hurry i go straight for bacon and eggs and 3 minutes later out of the microwave I'm happy 😊. I've become so impartial to not overcooking bacon 🥓 or until its crispy . I also find frozen and rethawed sour cream and the water drained makes similar to goat cheese taste but half the liquid is drained from the container .

I wanted to let the two of you know that I tried a version of this and it was fantastic! Thanks for sharing! We live in Houston, Texas and love Mexican food. Unfortunately most is high in carbs, so I used Chorizo sausage, Mexican cheese and the eggs. It was delicious and gave us the taste we had been missing! 👍
Good stuff but you don't need to add butter when cooking bacon, it already has enough fat and won't stick to your pan. Try adding some spinach in too, improves the flavour and texture.
Definitely going to give this recipe a try. The bacon I buy in the US is salty & so is the goat cheese. So I will not add as much salt as you did until I do a test batch. That bacon you used looked lovely. Ours isn't so great. Glad you give the weights on the recipe. Thanks!
it's not easy to find high quality bacon here either - especially at a reasonable price and with as little additives as possible. So whenever there's a discount on good bacon we buy it in bulk :)
thanks Peter! Yes, I think they might come out even fluffier if you only use egg whites. You'll definitely have to use more eggs though and experiment a little.
