Philly Cheese Steak Brats - Really Easy Beginner Sausage Making Recipe.

Today we made some Philly Cheese Steak Brats and they were amazing. We ground up 7 lbs of brisket and 3 lbs of pork but to make a 10 pound batch of brats. We ground the meat using the Cabelas 3/4 hp Carnivore grinder through the 4.5mm die. We then mixed in the proper ratio of PS Seasoning #290 Philly Cheese seasonings. For our batch it used 10 Tablespoons. We mixed this with a touch of water until protein extraction was good. We folded the high heat cheese into the meat and worked it in evenly. We then loaded the MEAT sausage stuffer and stuffed the brats. We cooked some at 275f added onions and green peppers and had an awesome sandwich. Links below to the products we used.

I have been eating brats my entire life. From Usinger to Johnsonville brats, all Wisconsin has to offer. These brats were a change from the traditional brats and had great flavor. Definitely well worth the work to experience these brats. Thank you Aaron, your videos are easy to follow and very informative.

Did you include the Deckle in your grind? I ask because I thought the deckle does not render as it's hard fat and cartilage...

This small brisket had a small decile so I left it. On a larger brisket I cut the hard top off of it and grind the rest. Grinding breaks it down enough to render fine. When I grind for burger I definitely cut as much as I can of the decile to get to about an 80/20 fat to beef ratio. A little more in sausage is good.
